We use Quicktime PRO to convert videos to H.264, We have successfully converted older .mov to H.264 format. Quicktime PRO also converts to FLV just fine as well. The only bummer is that Quicktime PRO costs $29.99 but if you do alot of encoding, it is definately worth it.

Flash Video Galleries are popular because how quickly it streams on the web, and its rather easy to implement one on your webpage. Conversion is the real key here and converting to either H264 video or FLV may take a few minutes to get the hang of it. The proper software will get you going in no time.
